👩‍🍳 How to make Wheat Porridge

  1. Roast wheat (2 mins, medium): Heat 1 tbsp ghee, add broken wheat. Toast 1-2 mins until light golden and fragrant.
  2. Set aside (1 min, room temp): Remove to plate.
  3. Heat remaining ghee (1 min, high): Add 2 tbsp ghee.
  4. Temper (1 min, high): Add cumin seeds (crackle in 3 secs).
  5. Add water (2 mins, high): Pour water, bring to boil.
  6. Add wheat (1 min, high): Add roasted wheat, bring back to boil.
  7. Simmer (15 mins, low): Cover, simmer over lowest heat. Wheat should absorb water, become tender, slightly creamy.
  8. Finish (1 min, low): Check salt, garnish with coriander.
