  1. Whisk eggs (1 min, room temp): Crack eggs, whisk with fork until frothy. Add turmeric and salt.
  2. Heat oil (1 min, high): Oil shimmering and smoking slightly.
  3. Pour eggs (30 secs, high): Pour whisked eggs over vegetables.
  4. Let set (1 min, high): Allow bottom to set 30-40 secs without stirring.
  5. Fold and cook (1 min, medium): Using spatula, gently fold omelet. Cook 20-30 secs more until top is mostly set but still slightly wet.
  6. Fold and remove (30 secs, low): Fold omelet in half, transfer to plate. Top with coriander.
