- Dry-roast dal and rice (5 mins, medium): Heat 1 tbsp ghee, roast dal and rice separately until pinkish-brown (dal) and translucent (rice), 2 mins each.
- Heat remaining ghee (1 min, high): Add cumin seeds, bay leaf, cinnamon, cloves, cardamom.
- Add ginger-garlic (1 min, medium): Stir in paste and green chillies.
- Add roasted dal and rice (1 min, medium): Stir to coat with ghee.
- Add turmeric and water (2 mins, high): Add turmeric, pour water, bring to boil.
- Add vegetables (1 min, high): Add potatoes, cauliflower, carrots, salt. Return to boil.
- Simmer (35 mins, low): Cover partially, simmer until creamy consistency. Add peas in final 5 mins.
