  1. Heat ghee (1 min, high): Ghee shimmering, smelling toasted.
  2. Temper spices (1 min, high): Add cumin seeds, bay leaf, cinnamon, cloves, cardamom.
  3. Add paste and chillies (1 min, medium): Stir in ginger-garlic paste and green chillies.
  4. Add tomatoes (2 mins, medium): Add crushed tomatoes, cook until they break down.
  5. Add rice (1 min, medium): Add rinsed rice, stir to coat with ghee and tomato base.
  6. Add spices and water (1 min, high): Dust turmeric and chilli powder. Pour water, bring to boil.
  7. Cover and simmer (15 mins, low): Once boiling, cover tightly. Simmer over lowest heat 12-15 mins until water is absorbed and rice is tender.
