  1. Combine base (1 min, room temp): In pan, combine tamarind paste and jaggery with water.
  2. Heat (3 mins, medium): Heat gently, stirring occasionally. Jaggery should dissolve, tamarind should slightly thin as it heats. Consistency should be pourable but not watery.
  3. Add spices (1 min, low): Add cumin, chilli powder, asafoetida, salt. Stir through.
  4. Cool (5 mins, room temp): Cool before using.
  5. Store (variable): Keep in airtight container refrigerated up to 2 weeks.
