👩🍳 How to make Steamed Lentil Cake
- Mix dry ingredients (2 mins, room temp): Combine rice flour, moong dal flour, grated coconut, jaggery, cardamom, salt.
- Add water gradually (2 mins, room temp): Add water slowly, mixing with hands. Dough should be moist, crumbly, not wet or sticky.
- Grease mold (1 min, room temp): Grease steaming cylinder or mold with ghee.
- Fill mold (1 min, low): Press dough mixture firmly into greased mold, filling to 3/4 full.
- Steam (15 mins, boiling water): Place mold in steamer with boiling water. Cover tightly. Steam 12-15 mins until puttu is cooked through—test with skewer inserted in center; it should come out clean.
- Cool briefly (2 mins, room temp): Remove from steamer, cool 1-2 mins before unmolding.
- Unmold and serve (1 min, hot): Unmold onto plate, cut into pieces. Serve hot, often accompanied by coconut chutney or jaggery syrup.
