  1. Heat mustard oil in a pan over medium-high heat (160°C).
  2. Fry fish pieces for 2 minutes per side. Remove and set aside.
  3. In the same oil, add mustard paste and cook for 1 minute, stirring constantly.
  4. Add ginger and green chillies, cook for 1 minute.
  5. Add turmeric and salt, stir for 20 seconds.
  6. Add water slowly, stirring to avoid lumps.
  7. Bring to simmer over medium heat (120°C).
  8. Add fish pieces, cover partially.
  9. Simmer for 12 minutes until fish is fully cooked and mustard flavor permeates.
  10. Gravy should be thin and aromatic with mustard notes.
  11. Serve hot with steamed rice.
