- Heat mustard oil in a pan over medium-high heat (160°C).
- Fry fish pieces for 2 minutes per side. Remove and set aside.
- In the same oil, add mustard paste and cook for 1 minute, stirring constantly.
- Add ginger and green chillies, cook for 1 minute.
- Add turmeric and salt, stir for 20 seconds.
- Add water slowly, stirring to avoid lumps.
- Bring to simmer over medium heat (120°C).
- Add fish pieces, cover partially.
- Simmer for 12 minutes until fish is fully cooked and mustard flavor permeates.
- Gravy should be thin and aromatic with mustard notes.
- Serve hot with steamed rice.
