👩‍🍳 How to make Shukto

  1. Heat mustard oil in a heavy-bottomed pan over medium heat (150°C).
  2. Temper with nigella seeds and green chillies for 30 seconds until fragrant.
  3. Add all vegetables except potol. Stir constantly for 2 minutes.
  4. Add turmeric powder and salt, mixing well.
  5. Add water, bring to boil. Reduce heat to low (80°C) and simmer for 12 minutes until vegetables soften but retain shape.
  6. Add potol pieces, cook for 5 more minutes until all vegetables are tender with slight resistance.
  7. Adjust seasoning. Serve hot with steamed rice.
