👩🍳 How to make Shukto
- Heat mustard oil in a heavy-bottomed pan over medium heat (150°C).
- Temper with nigella seeds and green chillies for 30 seconds until fragrant.
- Add all vegetables except potol. Stir constantly for 2 minutes.
- Add turmeric powder and salt, mixing well.
- Add water, bring to boil. Reduce heat to low (80°C) and simmer for 12 minutes until vegetables soften but retain shape.
- Add potol pieces, cook for 5 more minutes until all vegetables are tender with slight resistance.
- Adjust seasoning. Serve hot with steamed rice.
