  1. Mix semolina and yogurt (2 mins, room temp): Combine semolina with yogurt, mix well.
  2. Add water and rest (10 mins, room temp): Add water slowly, mixing to form thick batter. Let rest 10 mins—batter will thicken as semolina absorbs water.
  3. Prepare batter (3 mins, room temp): Lightly roast cumin seeds in pan dry for 30 secs until fragrant. Add to batter along with carrots, peas, onion, green chillies, ginger, asafoetida, turmeric, salt. Mix thoroughly.
  4. Grease molds (1 min, room temp): Lightly grease idli molds or small steaming cups with ghee.
  5. Fill molds (2 mins, room temp): Pour batter into greased molds, filling 3/4 full.
  6. Steam (12-15 mins, boiling water): Place molds in steamer, cover. Steam 10-12 mins until idlis spring back when touched—a skewer inserted in center should come out clean.
  7. Cool and unmold (2 mins, room temp): Cool 1-2 mins, unmold onto plate.
