👩🍳 How to make Savory Semolina Cake
- Mix semolina and yogurt (2 mins, room temp): Combine semolina with yogurt, mix well.
- Add water and rest (10 mins, room temp): Add water slowly, mixing to form thick batter. Let rest 10 mins—batter will thicken as semolina absorbs water.
- Prepare batter (3 mins, room temp): Lightly roast cumin seeds in pan dry for 30 secs until fragrant. Add to batter along with carrots, peas, onion, green chillies, ginger, asafoetida, turmeric, salt. Mix thoroughly.
- Grease molds (1 min, room temp): Lightly grease idli molds or small steaming cups with ghee.
- Fill molds (2 mins, room temp): Pour batter into greased molds, filling 3/4 full.
- Steam (12-15 mins, boiling water): Place molds in steamer, cover. Steam 10-12 mins until idlis spring back when touched—a skewer inserted in center should come out clean.
- Cool and unmold (2 mins, room temp): Cool 1-2 mins, unmold onto plate.
