👩‍🍳 How to make Rice with Ghee

  1. Heat ghee (1 min, high): Ghee should shimmer, smell toasted.
  2. Temper spices (1 min, high): Add cumin seeds (crackle in 3 secs), bay leaf, cinnamon, cloves, cardamom.
  3. Add rice (1 min, medium): Add rinsed rice, stir to coat with ghee. Rice should turn slightly opaque from heat and oil coating.
  4. Add water (2 mins, high): Pour water (each grain of rice needs 2 parts water for perfect cook). Bring to vigorous boil.
  5. Cover and simmer (15 mins, low): Once boiling, cover tightly with lid. Reduce to lowest heat. Do NOT stir during cooking or rice becomes mushy. After 12 mins, check: rice should be tender, water absorbed. If still wet, continue 2-3 mins more.
  6. Rest (3 mins, off heat): Remove from heat, keep covered 3 mins. This allows carryover cooking to complete.
  7. Fluff (1 min, room temp): Gently fluff rice with fork to separate grains.
