- Make puri dough (10 mins, low): Mix flour, salt, sugar. Add yogurt and oil, rub until breadcrumbs. Add water, knead soft dough (softer than luchi). Cover, rest 20 mins.
- Make curry (15 mins, medium): Heat oil, cook onions until golden. Add ginger-garlic paste, cook 1 min. Add tomatoes, cook until soft. Add spices, stir 1 min. Add boiled chickpeas and water, simmer 10 mins until curry thickens slightly. Add jaggery for sweetness.
- Shape and fry puri (5 mins, high): Divide dough into 6 balls. Roll into 5-inch disc. Fry in 350°F oil, pressing gently until puffed. Flip, fry second side. Remove to paper towels.
- Serve (2 mins, hot): Serve 2 hot puris with generous chickpea curry.
