- Heat mustard oil in a pan over medium-high heat (160°C).
- Temper cumin seeds for 20 seconds.
- Add green chillies, cook for 10 seconds.
- Add potato cubes, stir-fry for 2 minutes to coat with oil.
- Add turmeric and salt, mix well.
- Add water, bring to boil.
- Reduce to medium (120°C), add pumpkin flowers.
- Cover partially and cook for 8 minutes.
- All components should be cooked through and tender.
- Most liquid should be absorbed.
- Serve hot with rice and fish.
