- Heat oil (2 mins, high): Mustard oil shimmering, smoking slightly.
- Temper spices (1 min, high): Add cumin seeds, bay leaf, asafoetida, green chillies.
- Add ginger (30 secs, medium): Stir in ginger.
- Add pumpkin (1 min, medium): Add pumpkin cubes, stir to coat with oil.
- Add spices and water (1 min, high): Dust turmeric, chilli powder. Pour water, bring to boil.
- Simmer (12 mins, low): Cover, simmer until pumpkin becomes soft and translucent (test with fork—should pierce easily). Gravy should reduce to thick consistency, coating pumpkin.
- Add sugar (1 min, low): Stir in sugar, simmer 1 min more.
