- Heat oil (2 mins, high): Mustard oil shimmering.
- Add paste and chilli (1 min, medium): Stir in ginger-garlic paste and green chillies.
- Add tomato base (2 mins, medium): Optional: add crushed tomatoes, cook until reduced.
- Add spices and water (1 min, high): Dust turmeric, chilli powder, coriander. Pour water, bring to boil.
- Add prawns (3 mins, medium): Add prawns, simmer 2-3 mins until they turn pink and cooked through (do not overcook or they become rubbery).
- Add dairy (2 mins, low): Add yogurt and coconut milk, stir gently. Do not boil or yogurt will curdle. Simmer gently 2 mins for flavors to combine. Add bay leaf.
- Finish (1 min, low): Check salt, garnish with coriander leaves.
