- Heat mustard oil in a pan over medium heat (140°C).
- Temper cumin seeds for 20 seconds.
- Add onion slices, cook for 3 minutes until golden and soft, stirring frequently.
- Add ginger, cook for 30 seconds.
- Add turmeric and salt, stir for 20 seconds.
- Add potatoes, cook for 2 minutes, stirring to coat with oil.
- Add water, bay leaves, and green chillies. Bring to boil.
- Reduce to medium-low (100°C), cover partially, and simmer for 8 minutes.
- Add cauliflower and peas, cook for 5 minutes.
- Gently add cottage cheese cubes, avoiding breaking them.
- Simmer for 3 more minutes until all ingredients are cooked and cheese is warm.
- Gravy should be light and soupy. Serve hot with rice.
