  1. Heat mustard oil in a pan over medium heat (140°C).
  2. Temper cumin seeds for 20 seconds.
  3. Add onion slices, cook for 3 minutes until golden and soft, stirring frequently.
  4. Add ginger, cook for 30 seconds.
  5. Add turmeric and salt, stir for 20 seconds.
  6. Add potatoes, cook for 2 minutes, stirring to coat with oil.
  7. Add water, bay leaves, and green chillies. Bring to boil.
  8. Reduce to medium-low (100°C), cover partially, and simmer for 8 minutes.
  9. Add cauliflower and peas, cook for 5 minutes.
  10. Gently add cottage cheese cubes, avoiding breaking them.
  11. Simmer for 3 more minutes until all ingredients are cooked and cheese is warm.
  12. Gravy should be light and soupy. Serve hot with rice.
