  1. Mix gram flour, rice flour, cumin, chilli powder, turmeric, and salt.
  2. Add water gradually, whisking to form thick batter (consistency like heavy cream).
  3. Add onion rings, green chillies, and ginger. Mix gently to distribute vegetables.
  4. Heat oil to 165°C in deep pan.
  5. Using a spoon, drop batter into hot oil in small clusters (about 2 tbsp each).
  6. Fry 3-4 minutes until golden-brown and crispy on edges.
  7. Remove to paper towels. Drain well.
  8. Serve hot with tamarind chutney and green chutney.
