- Mix gram flour, rice flour, cumin, chilli powder, turmeric, and salt.
- Add water gradually, whisking to form thick batter (consistency like heavy cream).
- Add onion rings, green chillies, and ginger. Mix gently to distribute vegetables.
- Heat oil to 165°C in deep pan.
- Using a spoon, drop batter into hot oil in small clusters (about 2 tbsp each).
- Fry 3-4 minutes until golden-brown and crispy on edges.
- Remove to paper towels. Drain well.
- Serve hot with tamarind chutney and green chutney.
