👩‍🍳 How to make Okra Fry

  1. Prepare okra (5 mins, dry): Pat okra completely dry (moisture makes them slimy). Cut into 1-inch pieces. Do NOT cut too early or they release slime.
  2. Heat oil (2 mins, high): Mustard oil smoking slightly.
  3. Temper (30 secs, high): Add cumin seeds, asafoetida.
  4. Fry okra (6 mins, medium-high): Add okra pieces, spread in single layer. Do not stir for first 2 mins—let them fry undisturbed. Then stir constantly. They should turn golden-brown and crispy (3-4 mins more). Okra should no longer feel slimy, should be crispy when bitten.
  5. Add spices (1 min, medium): Dust turmeric, chilli powder, salt, ginger. Stir constantly for 60 secs.
  6. Remove and serve (1 min, room temp): Transfer to paper towels to drain excess oil.
