👩‍🍳 How to make Mutton Bhuna

  1. Brown mutton on all sides in hot oil.
  2. Remove.
  3. Add dry red chillies; fry 30 sec.
  4. Add onion; bhuna to almost-charred dark brown — this is the flavour foundation.
  5. Add ginger-garlic pastes; fry 3 min.
  6. Add tomato; cook dry.
  7. Add all spice powders and salt; fry 5 min until masala is very dark and aromatic.
  8. Return mutton; toss in masala.
  9. Cook on low-medium heat adding 50ml water every 15 min only when completely dry.
  10. Continue until mutton is fully tender and masala has completely coated each piece.
  11. Add garam masala; cook uncovered 5 min until completely dry.
  12. No gravy at all.
