👩🍳 How to make Mutton Bhuna
- Brown mutton on all sides in hot oil.
- Remove.
- Add dry red chillies; fry 30 sec.
- Add onion; bhuna to almost-charred dark brown — this is the flavour foundation.
- Add ginger-garlic pastes; fry 3 min.
- Add tomato; cook dry.
- Add all spice powders and salt; fry 5 min until masala is very dark and aromatic.
- Return mutton; toss in masala.
- Cook on low-medium heat adding 50ml water every 15 min only when completely dry.
- Continue until mutton is fully tender and masala has completely coated each piece.
- Add garam masala; cook uncovered 5 min until completely dry.
- No gravy at all.
