👩🍳 How to make Luchi
- Mix flour and salt in a bowl.
- Add 40ml oil, rub with fingertips until breadcrumb texture.
- Add water gradually, knead into soft, smooth dough.
- Cover with damp cloth for 15 minutes.
- Divide into 8 equal balls. Keep covered.
- Roll each ball into 4-inch thin circle on floured surface.
- Heat oil to 170°C in deep pan.
- Test temperature: drop small dough piece—should sizzle and rise immediately.
- Carefully place luchi in hot oil. It will immediately sink, then rise.
- Press gently with spatula for 5 seconds to help puff up. Flip.
- Fry second side for 5 seconds until pale golden with slight speckles.
- Remove to paper towels.
- Serve hot and crispy. Do not stack immediately as they will soften.
