👩‍🍳 How to make Luchi

  1. Mix flour and salt in a bowl.
  2. Add 40ml oil, rub with fingertips until breadcrumb texture.
  3. Add water gradually, knead into soft, smooth dough.
  4. Cover with damp cloth for 15 minutes.
  5. Divide into 8 equal balls. Keep covered.
  6. Roll each ball into 4-inch thin circle on floured surface.
  7. Heat oil to 170°C in deep pan.
  8. Test temperature: drop small dough piece—should sizzle and rise immediately.
  9. Carefully place luchi in hot oil. It will immediately sink, then rise.
  10. Press gently with spatula for 5 seconds to help puff up. Flip.
  11. Fry second side for 5 seconds until pale golden with slight speckles.
  12. Remove to paper towels.
  13. Serve hot and crispy. Do not stack immediately as they will soften.
