  1. Mix flour and fat (5 mins, medium): Combine flour, salt, and ghee in bowl. Rub together until breadcrumbs form.
  2. Knead dough (8 mins, low): Add warm water gradually, knead until soft and smooth. Cover with damp cloth.
  3. Rest dough (20 mins, room temp): Let sit to relax gluten—prevents springing back during frying.
  4. Shape balls (5 mins, low): Divide into 12 equal portions, roll into smooth balls.
  5. Roll thin (8 mins, low): Roll each ball into thin 3-4 inch disc on floured surface.
  6. Heat oil (5 mins, high): Oil should be 350°F—hot but not smoking. Test with small piece of dough.
  7. Fry first side (1 min, high): Gently slip luchi into oil, press with spoon until it puffs completely. Oil should bubble around edges.
  8. Flip and fry (1 min, high): Turn and fry second side until pale cream color—NOT brown. Remove with slotted spoon immediately.
  9. Drain (2 mins, room temp): Place on paper towels. Serve hot.
