- Heat mustard oil in a large pan over medium-high heat (160°C).
- Temper nigella seeds for 20 seconds until they crackle.
- Add green chillies, cook for 10 seconds.
- Add potatoes and carrots, stir-fry for 2 minutes.
- Add turmeric and salt, mix thoroughly.
- Add water, bring to boil.
- Add cabbage and ridge gourd. Reduce heat to medium (120°C).
- Cover partially and cook for 10 minutes, stirring occasionally.
- All vegetables should be tender but retain slight firmness (not mushy).
- Uncover and cook for 2 more minutes to reduce excess liquid if needed.
- Serve hot with rice and dal.
