👩🍳 How to make Kheer
- Heat ghee in a heavy pan over medium heat (140°C).
- Add almonds and pistachios, fry for 1-2 minutes until light golden. Remove to a bowl.
- Add milk and bay leaf to the pan, bring to medium-high heat (130°C).
- Add soaked rice, stir well.
- Cook for 25-30 minutes, stirring frequently to prevent sticking.
- Rice should become soft and mushy, milk should thicken and reduce.
- When rice is cooked, add sugar and stir until dissolved.
- Add condensed milk, cardamom, and saffron.
- Cook for 2-3 more minutes on low heat (80°C).
- Remove bay leaf.
- Serve warm or chilled, topped with remaining nuts.
