👩‍🍳 How to make Kheer

  1. Heat ghee in a heavy pan over medium heat (140°C).
  2. Add almonds and pistachios, fry for 1-2 minutes until light golden. Remove to a bowl.
  3. Add milk and bay leaf to the pan, bring to medium-high heat (130°C).
  4. Add soaked rice, stir well.
  5. Cook for 25-30 minutes, stirring frequently to prevent sticking.
  6. Rice should become soft and mushy, milk should thicken and reduce.
  7. When rice is cooked, add sugar and stir until dissolved.
  8. Add condensed milk, cardamom, and saffron.
  9. Cook for 2-3 more minutes on low heat (80°C).
  10. Remove bay leaf.
  11. Serve warm or chilled, topped with remaining nuts.
