👩🍳 How to make Katla Macher Jhol
- Heat mustard oil in a large pan over medium-high heat (170°C).
- Fry fish pieces for 2-3 minutes per side until light golden. Remove and set aside.
- In the same oil, temper nigella seeds for 20 seconds until crackling.
- Add ginger-garlic paste, cook for 1 minute until fragrant, stirring constantly.
- Add cumin powder and turmeric, cook for 30 seconds.
- Add potatoes, stir-fry for 2 minutes.
- Add water, bring to boil. Add green chillies and salt.
- Reduce to medium (120°C), simmer for 8 minutes until potatoes are almost tender.
- Add pointed gourd pieces.
- Return fish pieces to pan. Simmer for 10 more minutes.
- All components should be cooked, fish opaque and flaking, vegetables tender.
- Gravy should be light and aromatic. Serve hot with rice.
