👩‍🍳 How to make Jaggery Rice

  1. Heat ghee (1 min, high): Ghee shimmering.
  2. Add rice (1 min, medium): Add rinsed rice, stir to coat with ghee. Rice should turn slightly opaque.
  3. Add water and salt (2 mins, high): Pour water, add salt, bring to boil.
  4. Simmer (12 mins, low): Cover tightly, reduce heat to lowest setting. Simmer undisturbed 12-14 mins until water absorbed and rice is tender.
  5. Dissolve jaggery (1 min, warm): In warm bowl, add small amount of hot water to jaggery, dissolve completely.
  6. Add to rice (1 min, low): Gently stir jaggery solution into cooked rice. Add cardamom, saffron.
