👩🍳 How to make Ilish Macher Jhol
- Heat mustard oil in a large pan over medium-high heat (170°C).
- Fry fish pieces for 2 minutes per side until lightly cooked. Remove and set aside.
- In the same oil, add onion slices. Cook for 2 minutes until soft.
- Add ginger paste, cook for 1 minute.
- Add turmeric, chilli powder, and cumin. Stir for 30 seconds.
- Add potatoes, stir for 1 minute.
- Add water, bring to boil.
- Add green chillies and salt.
- Reduce to medium (120°C). Return fish pieces to pan.
- Simmer for 12 minutes until potatoes are tender and fish is fully cooked.
- Gravy should be thin to medium consistency.
- Serve hot with steamed rice.
