  1. Heat oil (2 mins, high): Mustard oil shimmering.
  2. Temper (1 min, high): Add cumin seeds, asafoetida.
  3. Add tomatoes (2 mins, medium): Add crushed tomatoes, cook until broken down.
  4. Add spices and water (1 min, high): Dust turmeric, chilli powder. Pour water, bring to boil.
  5. Add moong (1 min, high): Add sprouts or moong beans, return to boil.
  6. Simmer (8 mins, low): Cover partially, simmer until flavors meld and gravy thickens slightly.
