👩🍳 How to make Egg Omelette
- Whisk eggs (2 mins, room temp): Crack eggs into bowl, add salt. Whisk vigorously with fork until frothy. Mixture should be pale yellow, airy.
- Heat pan (1 min, high): Cast iron or heavy pan over high heat until very hot.
- Add oil (30 secs, high): Add 2 tbsp mustard oil, swirl to coat surface. Oil should shimmer and smoke slightly.
- Add aromatics (1 min, high): Add sliced onions, cook 30 secs until they turn translucent. Add green chillies.
- Pour eggs (1 min, high): Pour egg mixture over onions and chillies. Let sit undisturbed 10-15 secs until bottom sets slightly.
- Scramble and stir (2 mins, medium): Using spatula, scramble and stir constantly. Eggs should break into curds, turn pale yellow to light golden. Keep moving to prevent sticking.
- Add turmeric and coriander (30 secs, medium): Dust turmeric, add coriander leaves. Stir through.
