👩🍳 How to make Dim Toast
- Prepare egg mixture (3 mins, room temp): Crack eggs into wide bowl. Add milk. Whisk vigorously with fork until frothy—air incorporation creates light, fluffy coating. Add chopped onion, green chillies, coriander, turmeric, chilli powder, ginger, salt. Mix thoroughly. Mixture should be pale yellow, airy, no visible egg white streaks.
- Heat pan (2 mins, high): Cast iron or heavy-bottomed pan over medium-high heat. Pan should be hot but not smoking.
- Add oil (30 secs, medium-high): Add 1 tbsp mustard oil, swirl to coat entire surface. Oil should shimmer.
- Toast bread (1 min, medium-high): Place 2 bread slices in pan, cook 30 secs per side until light golden. This toasting firms bread so it won't absorb egg mixture excessively. Remove to plate.
- Coat with egg (2 mins, medium-high): Add remaining 1 tbsp oil to pan, swirl. Pour half the egg mixture into pan, spread with spoon. Allow to set 20 secs until bottom forms thin omelette.
- Place bread (1 min, medium-high): Quickly place toasted bread slices on egg omelette. Pour remaining egg on top, covering bread completely. Fold omelette over bread, creating sandwich. Bread should be encased in egg on both sides.
- Flip and finish (1 min, medium): Carefully flip, cook second side 30-45 secs until golden.
