👩🍳 How to make Cumin-Coriander Tempering Mix
- Dry roast spices (2 mins, medium-high): In pan, heat oil/ghee. Add cumin, coriander, mustard, fenugreek seeds. Toast 60-90 secs, stirring constantly. Seeds should become fragrant, pop and crackle. Add red chillies, toast 30 secs more.
- Cool (5 mins, room temp): Transfer to plate, cool completely.
- Store (variable): Once cooled, store in airtight glass container. Use within 1 week for maximum fragrance, or grind into powder for longer shelf life.
- Use: This tempering base is heated in oil/ghee and poured into finished dal, vegetables, or rice to add final aromatic layer.
📖 Cultural notes
Tadka masala is aromatic oil-spice base—its toasted fragrance defines final flavor of dish, added at end for maximum impact. ---
