👩🍳 How to make Chingri Malaikari with Rice
- *Rice Preparation:*
- Rinse rice under running water until water runs clear.
- In a separate pot, heat 15ml ghee over medium heat (140°C).
- Add rice, stir-fry for 2 minutes.
- Add 500ml water, salt, and bay leaf.
- Bring to boil, then reduce to low (80°C).
- Cover and cook for 15 minutes until water is absorbed.
- Fluff with fork and keep warm.
- *Curry Preparation (parallel):*
- Heat mustard oil in a pan over medium heat (140°C).
- Add onion slices, cook for 3 minutes until golden.
- Add ginger paste, cook for 1 minute.
- Add green chillies, green cardamom, cinnamon, and cumin powder. Cook for 1 minute.
- Add prawns, cook for 2 minutes until starting to turn pink.
- Add coconut milk slowly, stirring gently.
- Reduce heat to low (80°C), simmer for 8 minutes.
- Prawns should be fully cooked and opaque.
- Taste and adjust salt.
- Serve curry over warm rice.
