  2. Heat pan (2 mins, high): Non-stick or cast iron skillet over high heat until very hot.
  3. Oil and pour (2 mins, high): Add 1 tsp oil, swirl to coat. Pour 1/4 cup batter, spread into 5-6 inch disc.
  4. Check underside (15 secs, medium-high): Lift edge with spatula—should be golden-brown.
  5. Flip and cook (1.5 mins, medium): Flip, cook second side 1-1.5 mins until light golden.
  6. Serve (1 min, hot): Transfer to plate. Serve hot with tomato chutney.
