  1. Coat chicken in yogurt, onion paste, ginger-garlic pastes, white pepper, salt; rest 1 hour.
  2. In ghee, bloom cardamom and mace 30 sec.
  3. Add marinated chicken; cook uncovered on medium-low heat, turning often, until chicken cooks through and yogurt masala thickens, 25–30 min.
  4. Add sugar, kewra water, green chillies, saffron milk.
  5. Simmer 5 min on low heat.
  6. Sauce should be creamy-white.
  7. Top with fried onion.
  8. Serve with naan or polao.
