👩🍳 How to make Chicken Kosha
- Heat mustard oil in a heavy pan over medium-high heat (170°C).
- Brown chicken pieces in batches for 3 minutes per side. Remove and set aside.
- In the same oil, cook onion slices over medium heat (140°C) for 6 minutes until golden and crispy.
- Add ginger and garlic paste, cook for 2 minutes until fragrant.
- Add turmeric, chilli powder, coriander, and cumin. Cook for 1 minute.
- Lower heat to medium-low (100°C). Add yogurt slowly, 3 tbsp at a time, stirring well.
- Add bay leaves, green cardamom, and black cardamom.
- Return chicken to pan. Add salt and water.
- Bring to boil, then reduce to low (80°C).
- Cover and simmer for 30 minutes, stirring occasionally.
- Chicken should be very tender, gravy thick and dark brown.
- Serve hot with rice or luchi.
