👩‍🍳 How to make Chicken Bhuna

  1. Season; fry chicken until golden-brown all over.
  2. Remove.
  3. Add dry chilli; fry 30 sec.
  4. Fry onion to very dark golden-brown — almost charred.
  5. Add ginger-garlic, tomato, spice powders; bhuna, adding water only in tablespoon splashes, until oil surfaces.
  6. Return chicken; toss in masala.
  7. Cook 10–12 min on medium-low with no water — the chicken releases moisture that is then reabsorbed.
  8. The result is dry-coated chicken.
  9. Garam masala and coriander.
  10. No gravy — this is a dry dish.
