- Heat mustard oil in a pan over medium heat (140°C).
- Temper cumin seeds and nigella seeds for 20 seconds until crackling.
- Add green chillies and ginger, cook for 30 seconds.
- Add potato slices, stir gently for 2 minutes to coat with oil.
- Add turmeric and salt, mix well.
- Add water, bring to boil. Reduce to medium-low (100°C).
- Simmer for 10 minutes until potatoes are nearly cooked and translucent at edges.
- Gently add cottage cheese cubes, avoiding breaking them.
- Simmer for 5 more minutes until cheese is heated through.
- The gravy should be light and abundant. Serve hot with rice.
