- Add salt and water, bring to boil.
- Reduce to medium-low (100°C), cover, and simmer for 12 minutes.
- Dal should be soft but retain individual grains (not mushy).
- Most water should be absorbed, creating a dry, roasted preparation.
- Stir occasionally to ensure even cooking.
- Serve hot as a side dish with fish curry and rice.
