  1. Heat mustard oil in a pan over medium-high heat (160°C).
  2. Add soaked chana dal, stir-fry for 2 minutes until lightly coated with oil.
  3. Add cumin powder, turmeric, and chilli powder. Stir for 1 minute.
  4. Add salt and water, bring to boil.
  5. Reduce to medium-low (100°C), cover, and simmer for 12 minutes.
  6. Dal should be soft but retain individual grains (not mushy).
  7. Most water should be absorbed, creating a dry, roasted preparation.
  8. Stir occasionally to ensure even cooking.
  9. Serve hot as a side dish with fish curry and rice.
