- Heat oil (2 mins, high): Mustard oil shimmering with smoke.
- Temper (1 min, high): Add cumin seeds, asafoetida.
- Add paste and chilli (1 min, medium): Stir in paste and green chillies.
- Add potatoes (2 mins, medium): Add diced potatoes, stir to coat with oil.
- Add tomatoes (1 min, medium): Add crushed tomatoes, break down into oil.
- Add spices and water (1 min, high): Dust turmeric, chilli powder, coriander. Pour water, bring to boil.
- Add cauliflower (1 min, high): Add cauliflower florets, return to boil.
- Simmer (10 mins, low): Cover partially, simmer until cauliflower is tender and potatoes are cooked through.
