- Temper (1 min, high): Add cumin seeds, asafoetida.
- Add carrots (1 min, medium): Add grated/julienned carrots, stir constantly.
- Add spices and water (1 min, high): Dust turmeric, chilli powder. Pour water, bring to boil.
- Simmer (6 mins, low): Cover, simmer until carrots are tender and water mostly evaporated. Texture should be moist, not dry.
- Add sugar (30 secs, low): Stir in sugar.
