👩‍🍳 How to make Bitter Melon Curry

  1. Sprinkle salt on bitter melon slices. Let sit for 5 minutes to release bitterness slightly.
  2. Heat mustard oil in a pan over medium-high heat (160°C).
  3. Temper nigella seeds for 20 seconds until crackling.
  4. Add green chillies, cook for 10 seconds.
  5. Add potato slices, stir-fry for 2 minutes.
  6. Add bitter melon slices, stir for 1 minute.
  7. Add turmeric and chilli powder, mix well.
  8. Add water, bring to boil.
  9. Reduce to medium (120°C), cover partially, and cook for 10 minutes.
  10. All components should be tender. Bitter flavor should be balanced.
  11. Serve hot with rice and fish.
