👩🍳 How to make Bitter Melon Curry
- Sprinkle salt on bitter melon slices. Let sit for 5 minutes to release bitterness slightly.
- Heat mustard oil in a pan over medium-high heat (160°C).
- Temper nigella seeds for 20 seconds until crackling.
- Add green chillies, cook for 10 seconds.
- Add potato slices, stir-fry for 2 minutes.
- Add bitter melon slices, stir for 1 minute.
- Add turmeric and chilli powder, mix well.
- Add water, bring to boil.
- Reduce to medium (120°C), cover partially, and cook for 10 minutes.
- All components should be tender. Bitter flavor should be balanced.
- Serve hot with rice and fish.
