  1. Bring water to boil (5 mins, high): In pot, bring salted water to rolling boil.
  2. Add cornmeal slowly (2 mins, high): Sprinkle cornmeal slowly while stirring vigorously to prevent lumps. Stir constantly.
  3. Add turmeric (1 min, medium): Once cornmeal is incorporated, dust turmeric.
  4. Finish (1 min, low): When polenta is thick and pulls away from pan sides when stirred, it's done. Add ghee and stir through.
  5. Season (1 min, room temp): Stir in coriander and green chillies.
