  1. Heat oil (2 mins, high): Mustard oil smoking slightly.
  2. Temper spices (1 min, high): Add panch poran seeds (should crackle in 4-5 secs), asafoetida.
  3. Add dal (1 min, high): Add dried boiled chana dal, stir constantly. Dal should fry until each grain turns golden and crispy (3-4 mins). Sound should be crunchy, individual grains separate.
  4. Add spices (1 min, medium): Dust turmeric, chilli powder, salt. Stir constantly for 60 secs. Smell should turn from raw to toasted.
  5. Add ginger (30 secs, medium): If using, add minced ginger, stir through.
  6. Remove and cool (1 min, room temp): Transfer to paper towel to cool and drain excess oil.
  7. Garnish and serve (1 min, room temp): Top with sliced green chillies if desired. Serve as snack with tea or as side with breakfast.
