👩‍🍳 How to make Beguni

  1. Mix wheat flour, rice flour, turmeric, chilli powder, jaggery, and salt.
  2. Add water gradually, whisking to form thick batter.
  3. Heat oil to 170°C in deep pan.
  4. Dip each brinjal slice into batter, coating both sides thoroughly.
  5. Carefully place in hot oil, fry 2-3 minutes until golden-brown on one side.
  6. Flip, fry 2 more minutes until both sides are golden and crispy.
  7. Remove to paper towels. Drain well.
  8. Serve hot. The slight sweetness from jaggery provides unique flavor.
