👩🍳 How to make Beguni
- Mix wheat flour, rice flour, turmeric, chilli powder, jaggery, and salt.
- Add water gradually, whisking to form thick batter.
- Heat oil to 170°C in deep pan.
- Dip each brinjal slice into batter, coating both sides thoroughly.
- Carefully place in hot oil, fry 2-3 minutes until golden-brown on one side.
- Flip, fry 2 more minutes until both sides are golden and crispy.
- Remove to paper towels. Drain well.
- Serve hot. The slight sweetness from jaggery provides unique flavor.
