👩🍳 How to make Begun Bhaja
- Sprinkle turmeric and salt on eggplant slices. Let sit for 5 minutes to release moisture.
- Pat dry with paper towels.
- Heat mustard oil in a deep pan over medium-high heat (170°C).
- Test temperature: a small slice should sizzle immediately and sink then rise.
- Fry eggplant slices in batches, avoiding overcrowding (4-5 minutes per batch).
- First side should cook for 2-3 minutes until light golden. Flip and fry another 2 minutes until both sides are golden-brown and crispy.
- Remove to paper towels. Drain well.
- While still warm, sprinkle chilli powder and nigella seeds over fried slices. Toss gently.
- Serve immediately to maintain crispness.
