👩🍳 How to make Tehri
- Soak rice in water 20 minutes, drain
- Heat ghee in a heavy-bottomed pot at medium-high heat
- Add cumin seeds, listen for popping sound (3-4 seconds)
- Add sliced onions, fry 3-4 minutes until softened and pale golden
- Add ginger-garlic paste, cook 1 minute (raw smell should disappear)
- Add minced green chilies, cook 20 seconds
- Add diced potatoes, peas, and carrots—stir for 2-3 minutes
- Add turmeric powder, stir 20 seconds
- Add drained rice, stir gently for 2 minutes to coat with ghee
- Add whole spices: bay leaf, cardamom, cinnamon, cloves
- Pour 400ml water, add salt
- Bring to boil (high heat, 3-4 minutes)
- Once boiling, reduce heat to low, cover tightly
- Cook 15-18 minutes without opening lid (steam cooking)
- After 15 minutes: gently lift lid, check if rice is cooked and water is absorbed
- Rice should be separate, each grain fluffy, vegetables should be tender
- Turn off heat, let rest covered 5 minutes
