🧺 Ingredients

👩‍🍳 How to make Tehri

  1. Soak rice in water 20 minutes, drain
  2. Heat ghee in a heavy-bottomed pot at medium-high heat
  3. Add cumin seeds, listen for popping sound (3-4 seconds)
  4. Add sliced onions, fry 3-4 minutes until softened and pale golden
  5. Add ginger-garlic paste, cook 1 minute (raw smell should disappear)
  6. Add minced green chilies, cook 20 seconds
  7. Add diced potatoes, peas, and carrots—stir for 2-3 minutes
  8. Add turmeric powder, stir 20 seconds
  9. Add drained rice, stir gently for 2 minutes to coat with ghee
  10. Add whole spices: bay leaf, cardamom, cinnamon, cloves
  11. Pour 400ml water, add salt
  12. Bring to boil (high heat, 3-4 minutes)
  13. Once boiling, reduce heat to low, cover tightly
  14. Cook 15-18 minutes without opening lid (steam cooking)
  15. After 15 minutes: gently lift lid, check if rice is cooked and water is absorbed
  16. Rice should be separate, each grain fluffy, vegetables should be tender
  17. Turn off heat, let rest covered 5 minutes
