👩‍🍳 How to make Rogan Josh

  1. Heat ghee in heavy pot at medium-high
  2. Add sliced onions, fry 6-7 minutes until deep golden
  3. Remove 25g for garnish
  4. Add meat to remaining onions, cook 5 minutes to seal
  5. Add ginger-garlic paste, ginger slices, green chilies
  6. Cook 1 minute
  7. Add all whole spices, stir 20 seconds
  8. Add yogurt slowly in 2-3 portions, stirring well
  9. Add all ground spices one by one, stirring 15-20 seconds each
  10. Add tomatoes, cook 5-7 minutes until soft
  11. Pour 400ml water, bring to boil
  12. Reduce heat to low, cover and simmer 45-50 minutes
  13. Meat should be very tender; gravy should be thick, coating meat
  14. Stir occasionally; water should reduce to about 200ml
  15. Taste and adjust salt and spice
