👩🍳 How to make Rogan Josh
- Heat ghee in heavy pot at medium-high
- Add sliced onions, fry 6-7 minutes until deep golden
- Remove 25g for garnish
- Add meat to remaining onions, cook 5 minutes to seal
- Add ginger-garlic paste, ginger slices, green chilies
- Cook 1 minute
- Add all whole spices, stir 20 seconds
- Add yogurt slowly in 2-3 portions, stirring well
- Add all ground spices one by one, stirring 15-20 seconds each
- Add tomatoes, cook 5-7 minutes until soft
- Pour 400ml water, bring to boil
- Reduce heat to low, cover and simmer 45-50 minutes
- Meat should be very tender; gravy should be thick, coating meat
- Stir occasionally; water should reduce to about 200ml
- Taste and adjust salt and spice
