  1. Mix maida, yogurt, turmeric, and salt to make a smooth batter (consistency like pancake batter)
  2. Let batter rest 30 minutes at room temperature (fermentation helps crispness)
  3. In a separate pan, dissolve 150g sugar in 200ml water by heating (takes 3-4 minutes)
  4. Once sugar dissolves, remove from heat
  5. Add lemon juice and saffron water to syrup
  6. Add red food color if desired
  7. Let syrup cool to room temperature (it will thicken slightly—should be like honey consistency)
  8. Heat oil to 175°C in a wok or deep pan
  9. Prepare jalebi mold (funnel with spiral tip) or use a squeeze bottle with a small round nozzle
  10. Fill mold with batter
  11. When oil is hot enough (test: small piece of batter should sizzle immediately and float within 3 seconds)
  12. Hold mold 8-10cm above oil surface
  13. Squeeze batter in spiral pattern to create coil about 8-10cm diameter
  14. Make 2-3 spirals in oil (don't crowd pan)
  15. Fry 5-6 seconds until batter sets and turns light golden
  16. Using tongs or slotted spoon, flip jalebi carefully
  17. Fry 5-6 seconds on reverse side until evenly golden
  18. Remove to a tray (not paper towel—syrup will soak through)
  19. Immediately dip hot jalebi into cooled syrup for 2-3 seconds
  20. Place syrup-soaked jalebi on a plate
  21. Repeat for remaining batter
  22. Jalebi hardens slightly as it cools, but stays crispy on outside and soft inside
