👩🍳 How to make Paneer Tikka Masala
- Mix yogurt, chili powder, ginger-garlic paste, salt
- Add paneer cubes, coat evenly
- Marinate 15-20 minutes
- Heat oil in a pan at high heat
- Pan-fry marinated paneer cubes 2-3 minutes, turning occasionally, until light golden on edges
- Set aside
- Heat ghee in heavy pan at medium-high
- Add onions, fry 3-4 minutes until softened
- Add ginger-garlic paste, cook 1 minute
- Add green chilies, cook 15 seconds
- Add tomatoes, cook 5-7 minutes until soft and integrated
- Add all ground spices one by one, stirring 20 seconds each
- Add 250ml water, bring to boil
- Reduce heat to low, simmer 5-7 minutes
- Gravy should reduce slightly
- Add butter in small pieces, stir to melt
- Add cream gradually, stirring continuously
- Add pan-fried paneer cubes to gravy
- Simmer gently 3-5 minutes (don't boil hard, paneer might toughen)
- Gravy should coat paneer cubes
- Taste and adjust salt and spice
