👩‍🍳 How to make Paneer Tikka Masala

  1. Mix yogurt, chili powder, ginger-garlic paste, salt
  2. Add paneer cubes, coat evenly
  3. Marinate 15-20 minutes
  4. Heat oil in a pan at high heat
  5. Pan-fry marinated paneer cubes 2-3 minutes, turning occasionally, until light golden on edges
  6. Set aside
  7. Heat ghee in heavy pan at medium-high
  8. Add onions, fry 3-4 minutes until softened
  9. Add ginger-garlic paste, cook 1 minute
  10. Add green chilies, cook 15 seconds
  11. Add tomatoes, cook 5-7 minutes until soft and integrated
  12. Add all ground spices one by one, stirring 20 seconds each
  13. Add 250ml water, bring to boil
  14. Reduce heat to low, simmer 5-7 minutes
  15. Gravy should reduce slightly
  16. Add butter in small pieces, stir to melt
  17. Add cream gradually, stirring continuously
  18. Add pan-fried paneer cubes to gravy
  19. Simmer gently 3-5 minutes (don't boil hard, paneer might toughen)
  20. Gravy should coat paneer cubes
  21. Taste and adjust salt and spice
