👩🍳 How to make Korma
- Heat ghee in heavy pot at medium-high
- Add sliced onions, fry 6-7 minutes until deep golden
- Remove 40g fried onions for garnish
- Add meat to remaining onions, cook 5-6 minutes to seal
- Add ginger-garlic paste, cook 1 minute
- Add all whole spices, stir 20 seconds
- Add ground spices: coriander, cumin, turmeric
- Stir each spice for 20 seconds
- Add yogurt slowly in 3-4 portions, stirring (prevents curdling)
- Cook on medium heat 15-20 minutes until meat is 60% cooked
- Add cashew paste, almond paste
- Stir well, cook 3-4 minutes
- Pour water, bring to boil
- Reduce heat to low, cover and simmer 30-35 minutes
- Meat should be very tender; gravy should be smooth and creamy
- Add cream in last 2 minutes, stir gently
- Taste and adjust salt
