👩🍳 How to make Chikhalwali Halwa Puri
- In a dry pan, heat wheat flour over medium heat
- Stir constantly for 5-7 minutes until flour releases a nutty aroma and changes color slightly
- It should become warm but not browned
- Set aside to cool
- Heat 75ml ghee in a heavy pan at medium heat
- Add roasted wheat flour to hot ghee
- Stir continuously for 8-10 minutes
- Flour will gradually darken from beige to light golden to golden
- When it reaches golden-brown and releases a toasted aroma, it's ready
- In a separate pan, dissolve 80g sugar in 250ml water by heating
- Once sugar dissolves, remove from heat and set aside
- Separately, heat 20ml ghee in a small pan, fry cashews until golden (2-3 minutes)
- Add raisins, fry 1 minute until plump
- Add fried nuts with ghee to roasted flour-ghee mixture
- Add crushed green cardamom
- Return to heat (medium), slowly pour sugar-water while stirring constantly
- Halwa will bubble and steam—continue stirring for 8-10 minutes
- When water is fully absorbed, halwa becomes thick and glossy, leaving sides of pan
- Taste and add salt
