👩‍🍳 How to make Chikhalwali Halwa Puri

  1. In a dry pan, heat wheat flour over medium heat
  2. Stir constantly for 5-7 minutes until flour releases a nutty aroma and changes color slightly
  3. It should become warm but not browned
  4. Set aside to cool
  5. Heat 75ml ghee in a heavy pan at medium heat
  6. Add roasted wheat flour to hot ghee
  7. Stir continuously for 8-10 minutes
  8. Flour will gradually darken from beige to light golden to golden
  9. When it reaches golden-brown and releases a toasted aroma, it's ready
  10. In a separate pan, dissolve 80g sugar in 250ml water by heating
  11. Once sugar dissolves, remove from heat and set aside
  12. Separately, heat 20ml ghee in a small pan, fry cashews until golden (2-3 minutes)
  13. Add raisins, fry 1 minute until plump
  14. Add fried nuts with ghee to roasted flour-ghee mixture
  15. Add crushed green cardamom
  16. Return to heat (medium), slowly pour sugar-water while stirring constantly
  17. Halwa will bubble and steam—continue stirring for 8-10 minutes
  18. When water is fully absorbed, halwa becomes thick and glossy, leaving sides of pan
  19. Taste and add salt
