👩🍳 How to make Chana Masala
- Heat ghee in heavy pan at medium-high
- Add onions, fry 3-4 minutes until softened
- Add ginger-garlic paste, cook 1 minute
- Add green chilies, cook 20 seconds
- Add tomatoes, cook 5-7 minutes until soft and pulpy
- Add all ground spices one by one, stirring 20 seconds each
- Add cooked chickpeas, stir well to coat with spices
- Add 200ml water, bring to boil
- Reduce heat to low, simmer uncovered 15-20 minutes
- Gravy should reduce and chickpeas should be coated
- Add amchur, stir
- Taste and adjust salt and spice
- Garnish with coriander, mint, ginger
