👩‍🍳 How to make Chana Masala

  1. Heat ghee in heavy pan at medium-high
  2. Add onions, fry 3-4 minutes until softened
  3. Add ginger-garlic paste, cook 1 minute
  4. Add green chilies, cook 20 seconds
  5. Add tomatoes, cook 5-7 minutes until soft and pulpy
  6. Add all ground spices one by one, stirring 20 seconds each
  7. Add cooked chickpeas, stir well to coat with spices
  8. Add 200ml water, bring to boil
  9. Reduce heat to low, simmer uncovered 15-20 minutes
  10. Gravy should reduce and chickpeas should be coated
  11. Add amchur, stir
  12. Taste and adjust salt and spice
  13. Garnish with coriander, mint, ginger
